Sous Chef required to work in our Banqueting Kitchen team As the Sous Chef based at our Pall Mall Club House, you will maintain the smooth running of the kitchen operation and take control in the absence of the Head Chef. You willproduce 5 star standards of food and continually strive for perfection and high levels of member satisfaction. We deliver a range of cuisines across a number of outlets including a Brasserie, Fine Dining, Lounge and Buffet to a high calibre of clientele. Working under our Executive Head Chef Philip Corrick and our Head Chef you will be encouraged to learn and develop within your career as a Chef, with many of our Chef's being entered and winning a number of Culinary completions across the UK. As a Sous Chef, the role will see you: * You will train and support the wider kitchen team including Sous, CDP and Commis in order to consistently deliver to the expectation of both members and management. * Assist to deliver the budget requirement as set out by the CMC and board, food cost, wage costs and all another budget costs attached to the department * Plan and produce rotas that ensure correct cover to manage the business requirements within the budget costs * Process all orders through Procure Wizard, adhering to supplier cut off points. * Accept daily deliveries and ensure all are in order by checking weights and quality * Prepare menu changes in advance working with the team, using the sales mix In return for your commitment well provide you with fantastic flexible benefits including; a very generous pension scheme, an employer paid health cash plan, holiday exchange, free meals on duty and a genuine investment in your personal development.
